Ken Schwenger is the President of Bakery Concepts, handling all marketing and sales functions related to the patented Rapidojet technology.

Kelly Allen, Membership Manager for BEMA had an opportunity to ask Mr. Schwenger a few questions about himself and the organization.

Q: What is your company most known for?

A: We are the exclusive agent for the patented Rapidojet hydration & mixing technology. We deliver this equipment all over the world.

Q: Would you like to share something new or innovative that your company has done recently?

A: Rapidojet’s recent patents combined with high-pressure liquid addition to drys in place of a metal mixing tool have allowed us to instantly and fully hydrate the full range of hydrocolloids at previously unattainable levels with ambient temperature water. Plus, grain Cleaning, Tempering and Sprouting bring drastic change for the flour milling industry. We’ve instantly hydrated mustard seeds by injecting vinegar at high-pressure. This eliminates the normal 12-hour soaking time and allows the seeds to go directly to the mill for mustard production.

Q: What drew your company to join BEMA?

A: BEMA offers a great opportunity to meet high-profile bakers as well as other equipment suppliers. This is an industry in which socialization and connections are extremely important.

Q: What do you enjoy doing in your spare time?

A: Bike riding and hiking are important to me. I need to get outside to relax every once in a while. I’ve participated in “Bike to the Beach”. This one day, 100-mile ride is a fundraiser for Autism Speaks.

Q: Is there anything that you think will remain the “new normal” as a result of the Coronavirus?

A: Although at a different level, remote working will remain to a certain degree. Electronic communications have advanced significantly, and the cost of travel will remain high.
